Fresh Tomato Salsa
Nothing is easier or more delicious than fresh tomato salsa and it’s highly versatile. Besides just enjoying it with Mystic Harvest tortilla chips, use it on tacos or try it on grilled chicken or fish.
2 pounds ripe Roma tomatoes (about 5 medium), seeded and chopped
1 jalapeño, minced (more or less to taste)
1/2 cup red onion, chopped
1/2 cup fresh cilantro, coarsely chopped
1 teaspoon coarse salt
Juice of 1 lime
Combine all ingredients in a bowl & mix well. Best when served immediately; may be made one hour ahead and kept at room temperature.
